-Cut watermelon, cut salad greens, and other cut fruit in 3 cold hold units were being held at 50 degrees F and above. Product was discarded. Move temperature sensor to an area that is less likely to be in temperature to accurately gauge the function of the unit. Do not use units until internal product temperature can be maintained at or below 41 degrees F.

-Fish being stored in ice is being stored at 46 degrees F and above. Fish that is sitting farther out of the ice is out of temperature, while buried product is not. Ensure product is deeply within ice bins. Product was lowered to proper temperature.

-Skim milk in the servers station was beyond its expiration date. Rotate stock regularly to ensure oldest product is used first. product was discarded.

-The inside of the ice machine, a food contact surface, in the main kitchen exhibited mold growth. Melt the ice, clean and sanitize the inside of this unit.

-The deli slicer, a food contact surface, was observed to have food residue and was not clean to sight. Break down this unit, clean and sanitize its parts.

-Large cuts of meat observed thawing at room temperature on the kitchen shelf, which is not an approved thawing method.

-Salad bar food was held at 54 °F, in the reach in bain marie area, rather than 41°F or below as required. Items were placed in bain marie within the 4 hour time frame therefore they were removed and placed in walk in cooler and also put on ice to correct. Bain marie must be repaired.

-Commercially processed refrigerated, ready to eat, time/temperature control for safety food, (lunch meats) located in the walk in cooler, and held more than 24 hours, is not being marked with the date it was opened. Corrected.

-Several Refrigerated ready to eat, time/temperature control for safety food prepared in the food facility and held for more than 24 hours, located in the walk in cooler, is not being date marked.
