Sept. 28--Here are the results of food safety inspections in Lehigh and Northampton counties for the week of Sept. 16-22.

The inspections listed here are those that fall under the jurisdiction of the Pennsylvania Department of Agriculture, as well as those county and local health departments that have elected to post results in the department's statewide inspection database.

-The Person in Charge does not have adequate knowledge of food safety in this food facility as evidenced by this non-compliant inspection.

-Food was held at 46-51°F, in a refrigerated prep unit, rather than 41°F or below as required. Discard all food stored in the unit for longer than two hours. Food was discarded.

-Food Employee observed eating food in the kitchen. Correct this practice immediately.

-The ice bins in the bar area were stored open with no covering. Cover ice bins when not in use to prevent contamination from surroundings.

-Bleu Cheese and salsa were held in a bain marie with temperatures of 48F & 50F, respectively. Corrective action was possible and product was moved to a properly functioning unit. Service or repair this unit.

-Food Employee observed donning single use gloves without a prior hand wash. Hands must be washed prior to donning single use gloves

-A cell phone charger was observed on the cook line with its cord lying in the French fry holding unit. French fries were not in the unit at the time of this observation. Wash the holding unit. Do not keep cell phone chargers on the cook line, do not use cell phones in areas of active food preparation and service.

-An open can of oyster sauce was stored in the basement dry storage area. The can was opened and exposed to its surroundings. After opening, place remaining product in a sealed food storage container and store according to manufacturer instructions.

-Foods, such as cut onions, in the front baine marie are being stored at 49 degrees F and above. Discard all foods out of temperature for more than 4 hours. Repair baine marie so that it can maintain internal product temperature at or below 41 degrees F.

-Soup in the front walk in cooler is being cooled in a deep container with a tight fitting lid. Cool foods in shallow containers with a loose fitting cover to facilitate rapid cooling. Reheat soup and rapidly cooler from 135 to 70 within 2 hours and 70 to 41 in 4 additional hours.

-Chicken was held at 46°F, in the cold hold, rather than 41°F or below as required. Per PIC, employee was preparing an order with the chicken outside of the unit and left door to unit open. Chicken had been placed in unit less than two hours ago and was moved to walk in cooler.

-One handwash sink was blocked, and two sinks had a jammed soap dispenser, so that soap was not readily available. Ensure that handwash sinks are accessible and properly supplied with hot water, soap and paper towels at all times.
