July 20--Here are the results of food safety inspections in Lehigh and Northampton counties for the week of July 8-14.

The inspections listed here are those that fall under the jurisdiction of the Pennsylvania Department of Agriculture, as well as those county and local health departments that have elected to post results in the department's statewide inspection database.

-Observed that several containers of raw chicken were observed being stored above sliced beef and other prepared foods. The raw chicken is to only be stored on the bottom shelf. Instructed owner to instruct employees of this.

-The Universal Cooler brand, reach in refrigerator that is located nearest the cash register, was not able to hold a temperature of 41 degrees F or colder. A constant reading of 55 degrees F was observed. The location stated the 4 items of food in the unit were transferred from the walk in refrigerator to this unit at 11 am opening.The food was taken back and placed in the walk in cooler. The unit may not be used for food storage until the unit is repaired or replaced and be able to hold 41 degrees F or colder.

-Observed that raw shrimp was being thawed in the 3 bay sink, there was no running water being used in the process. Explained to the owner the shrimp had to be thawed properly under running water. Correction was made at this time.

-No sign or poster posted at the handwash sink in the kitchen prep to remind food employees to wash their hands.

-The internal temperatures of both sides of the two door Beverage Air bain marie ranged from 54.4*F 55.3*F. Temperature monitored at least three times during inspection. Firm voluntarily disposed of contents. Air temperature at discharge was 54*F at 10:51 AM Refrigeration repair immediately contacted for repair. Bus tubs with ice set up for temporary correction until repair is effected.

-Food was held at 50°F, in the cold hold unit, rather than 41°F or below as required. Food had been out of temperature for a short time and was cooked immediately.

-Chicken, pork and beef not received at proper temperature, refrigerated at 41°F or below. Transport the food from the commissary in a way that keeps the food at or below 41°F.

Suns Deli & Grocery

-The main deli display case exhibited an ambient temperature of 60F. Additionally, products inside the unit such as ham, cheese, & salami exhibited temperatures of 53, 60, & 58F, respectively. Product was discarded. Potentially hazardous foods such as deli meats and cheeses must be maintained at temperatures of 41F or below. Do not use this unit until it can maintain temperatures of 41F or below.

-The refrigerator in the storage room exhibited an ambient temperature of 45F. Corrective action was possible. Service this unit.

-Commercially processed ready to eat food, located in the deli display case, and held more than 48 hours, is not being marked with the date it was opened. Date mark product with the day it was opened and discard six days from that date.

-Food Employee observed donning single use gloves without a prior hand wash. Hands must be washed prior to putting on a new pair of single use gloves.
