-Interior top of plastic ice shield has a mold build up also there is an unapproved metal screw in shield that is rusting and dripping rust into ice bin.

-Working containers in kitchen area, used for storing *chemicals, cleaners* taken from bulk supplies, were not marked with the common name of the chemical. Discarded due to unknown contents.

-Cleaned and sanitized equipment at the warewashing sinks is coming into contact with dirty wash water from a ponding of water on the drain board due to a slope of the sinks. Issue will be corrected by placing clean items on a rack instead of the drainboard at this time.

-Food was held at 56°F, in the salad bar, Sour cream, tartar sauce and cream cheese were 67°F in the ice bin, and coleslaw and Mayo were 51°F on the cold hold unit on the cook line rather than 41°F or below as required. All out of temperature food was discarded. TCS foods must be held at 41°F. Do not continue to store coleslaw and mayo in open unit on cook line. Repair or replace these units and ensure they are capable of holding temperature before storing food in them.

-Salad mixing bowls were being stored above pans of salad ingredients without lids in the top of the baine marie potentially being a source of contamination. Bowls were moved into the refrigerated drawer below.

-Cut vegetables were being held at 46 degrees F and higher in the baine marie on the left side of the cooking line near the entrance to the back room. Foods were moved to the blast chiller and the unit was closed to lower temperature. Ensure that baine marie is maintaining internal product temperature at or below 41 degrees F.

-Dairy based dressing was being held at 49 degrees F or higher in the baine marie that stores sauces and dressings. Foods were moved to the blast chiller and the unit was closed to lower temperature. Ensure that baine marie is maintaining internal product temperature at or below 41 degrees F.

-Bar hand sink was missing paper towels at the time of the inspection. Ensure that paper towels are available at hand sinks at all times during service.
